Soul Muffins

It's a tradition, a ritual and a way of survival really...I need something quick, easy to grab n' go if  I'm on the run, or just a midnight snack. I usually sing when in the process of folding all the ingredients, which makes the muffins extra rich in energy...really! So for those of you who I know, or don't know that stumbled upon this blog by sheer curiosity, i will be sharing with you my Soul Muffin recipe...Soul is not for me alone so I'm okay with giving away my recipe for gold. Please enjoy and let me know how it turned out. - 
Ania Soul Muffins

2 Ripe Bananas
1 cup Almond Milk
1/2 cup oil (olive, sunflower or what u like)
1tsp pure vanilla extract
1/4 cup molasses

2cups Whole Wheat or Spelt Flour
1/2 cup oats
1/2 cup cane sugar or 1/2 cup maple syrup (if using maple syrup add it to the wet ingredients above :)
1 tsp baking pwdr
1 tsp baking soda
a dash of salt
1/2 tsp cinnamon, nutmeg, cloves 
1/2 cup walnuts and raisins or chocolate chips (optional)

Preheat oven to 350 degrees C, and grease muffin sheet that holds twelve muffins. Mix the wet ingredients and then the dry ingredients separately and then combine. With all ingredients combined Mix, not for too long just till the dry ingredients is wet. Spoon the batter into each muffin tin... and bake for 20mins...after that let cool on a cooling rack, enjoy with or without butter. This lasts a few days outside of the fridge in a sealed container. This is usually my midnight snack when i'm playing my guitar or listening to new music.
